Average Spend per Diner in Restaurants Increases by 8.7% Over the Past Year

In recent months, inflation has played a crucial role in the global economy, affecting multiple industrial sectors. One of the most impacted is the restaurant sector, where rising costs of raw materials, energy, and other operational expenses directly affect establishments’ finances, forcing them to raise prices to maintain profitability.

To accurately measure how this situation is affecting diners, Delectatech conducted a study using its Artificial Intelligence engine and machine learning algorithms. Based on online data from a representative sample of over 18,000 restaurants across Spain, the study analyzed average diner spend and the evolution of the average ticket over the past 12 months.

This article explores the study’s results, offering a clear view of how inflation has impacted restaurant prices and how this has affected diner spending.

Average Restaurant Ticket Growth Exceeds CPI

Over the past year, average spend per diner in restaurants increased by 8.7%, rising from €23.53 to €25.57 between May 2022 and May 2023. This growth surpasses the increase in the Consumer Price Index (CPI), which was 3.2% over the same period.

Seville Leads Average Ticket Increase

The study focused on seven provinces with significant restaurant activity, where increases in average ticket were observed over the last 12 months. Seville tops the ranking with an 11.5% increase, followed by Valencia (+8.8%), Barcelona (+7.7%), Madrid (+7.3%), Vizcaya (+7.0%), Las Palmas (+6.7%), and finally the Balearic Islands (+3.8%).

Nevertheless, Seville and Valencia remain the provinces with the lowest average spend per diner (€22.94 in Seville and €24.18 in Valencia). Vizcaya is the most expensive (€28.29), followed by the Balearic Islands (€26.76) and Madrid (€26.61).

This indicates that in higher-priced areas, the average ticket has remained stable, whereas in lower-priced regions, rising costs appear to have a greater impact on consumers.

Variations by Consumption Period and Business Type

The study also examined average ticket behavior throughout 2023. After a slight decline in January and February, the average ticket has shown an upward trend since April, reaching €25.57 in May.

The analysis also revealed differences in average ticket growth by type of establishment. Restaurants recorded the highest increase at 8.9%, followed closely by cafés at 8.6%, while bars experienced a smaller rise of 8.0%.

International Diners Spend More than Domestic Diners

The data show that international diners spent 3.6% more than domestic diners during the analyzed period, highlighting the importance of tourism to Spain’s restaurant economy.

International visitors, attracted by the country’s rich culinary offerings and gastronomic reputation, make a significant contribution to the restaurant sector.
