Key Horeca Results in Summer 2025
On June 27 and 28, Madrid became the meeting point for executives, entrepreneurs, and business leaders across the entire value chain of Spanish hospitality. On the occasion of the twentieth edition of the AECOC Horeca Congress, over 400 attendees gathered to discuss topics related to the latest consumer trends, sector innovations, and logistical and digitalization challenges, among others.
On Wednesday at 11 a.m., Xavier Mallol, CEO and founder of Delectatech, delivered a presentation titled “The Artificial Intelligence Revolution in the Future of Hospitality”, addressing one of the most talked-about topics globally, which impacts virtually all areas of human life: Generative Artificial Intelligence and its flagship product, GPT.

During the talk, Xavier placed special emphasis on the functioning and scope of this learning-based technology. He presented, together with Iris, an AI model trained by Delectatech using a census of over 250,000 establishments, highlighting some of the most important data for developing projects in Spain’s Horeca sector. He concluded with a clear message: there are no good or bad models, only well-trained and poorly-trained models.
Xavier’s participation was accompanied by 13 other leaders from renowned companies such as Heineken, Grupo Alsea, Grupo Saona, McDonald’s, Fever, and others. Each shared their vision and expertise on the unstoppable technological advancement and the changes transforming consumer profiles and sector trends, providing insights that will help Spain take a step forward in its pursuit of leadership in the Horeca industry.
